Protein Strawberry Cheesecake Jars

Anyone else on a protein kick? Having grown up as a carb queen, and not being a huge fan of meat, it's a stretch to meet my protein goals. But I've got plans to increase my muscle mass, and here's a sweet way to work on those gains! The greatest part is, this is truly a rich, creamy, delicious dessert. High Protein Cheesecake Jars for the win!


Ingredients:


¼ cup maple syrup (SW018)


1 tsp vanilla extract (BP046)


1-2 scoops vanilla or unflavored protein powder (Sunwarrior) (NS908)


1 cup Greek yogurt (plain or vanilla) (DP200) OR make your own following our recipe


8 oz Organic Valley cream cheese, softened (CH114)


½ cup crushed Pamela's graham crackers (SN934) or our granola recipe


½ cup fresh berries (strawberries, blueberries, raspberries)


1 tbsp melted coconut oil (optional, for crust) (OL377)


Instructions:

For the crust: In blender, mix the graham crackers with melted coconut oil and 1 Tbsp maple syrup. Divide evenly into 4 small jars. Using the base of a smaller jar or a tamper, press the crust down.


For the filling: In a blender or mixer, beat the cream cheese, Greek yogurt, maple syrup, vanilla extract, and protein powder. Mix until smooth.


Spoon the cheesecake filling over the crust in each jar.


Toppings: Top each jar with fresh berries. If desired, add granola to the top, too!


Chill: Cover and refrigerate for at least 3 hours before serving, to allow cheesecake to thicken a bit.
